Frederick was born June 5/6, 1844 1 in Mittilkinzig, Odenwald, Hessen-Darmstadt, Germany. He was the son of Friedrick Schantz 1 and Eva Elizabeth Schuler 1 (he is the brother of Adam Schantz one of Dayton’s elite). He died July 14, 1931, in Dayton, Ohio. 1 He married Barbara A.3 Olt 2 on June 23, 1870, in Dayton, Ohio. 2 Barbara was the daughter of Frederick Olt 3 and unknown Horn. 3 She was born September 18, 1845 3 in Breitenbrunn, Odenwald, Germany, 3 and died June 3, 1923, in Dayton, Ohio. 3 They are both buried at Woodland Cemetery in Dayton. 4
Now, to make things even more complicated. There was a Barbara Olt living in Madison Twp., Montgomery County, Ohio, in 1860, but she is not my Barbara. 5 There is also a Barbara Olt who immigrated to the US in 1842, 6 but she, too, is not my Barbara. My Barbara came to the U.S. in 1866 and has been in the US for 34 years, according to the US census. 7 Since she was married June of 1870 (and shows up with Frederick in 1870), she never appeared in any census records as Barbara Olt. According to the 1900 census they had 7 children, of which only 4 were still living.

1. Death certificate informant was Albert J. Schantz. He gave Frederick's date of birth as June 6, 1844, the 5th is what's stated in his obituary. The death certificate also gives his place of birth, as well as his parents only as Hessen-Darmstadt, Germany. I do not remember where the Mittilkinzig, Odenwald came from (probably something about Adam Schantz, Sr).

3. Death certificate informant for Barbara was also Albert J. Schantz. He gave her middle initial as "A." Here he gives Barbara's place of birth as Breitenbrunn, Hessen-Darmstadt, Germany. I do not know where I got the Odenwald. Her obituary was not found.

Just found in the Dayton City Directories Callie Olt 1105 E. 5th, Dayton, Ohio. 8 Frederick was living on E 5th Street in the 1900 census. There's gotta be a connection. 1900 census McCandless Dayton, Ward 4, Montgomery County, Ohio

"Frederick Schantz.
Frederick Schantz, 87, a widely known resident of this city for many years died Tuesday night at his home, 401 Gunckel av. For several years he had been in poor health and during the past six months he had been confined to his home.
He was born June 5, 1844, in Germany, coming to America at the age of 15 years. Shortly afterward he settled in Dayton. In 1870 he married Barbara Olt, who preceded him in death eight years ago. He was actively engaged in the meat business until he retired in 1906. He belonged to Humboldt Lodge, Knights of Pythias; Schiller Lodge, I.O.O.F; the German Butchers society and St. John's Evangelical Lutheran church.
He was a brother of the late Adam Schantz, sr., and the last of the five Schantz brothers. Surviving him are two daughters, Mrs. Carl C. Mueller and Miss Anne Schantz; two sons, Fred W. and Albert J. Schantz, and a sister Mrs. Elizabeth Coerster, all of Dayton. There are nine grandchildren and six great grandchildren.
Funeral services will be conducted Friday an 10 a.m. at the residence. Rev. J. G. Mueller will officiate. Burial will be made in Woodland Cemetery."
The following three photographs are unidentified. Well, the first and last have names, but I don't know who they are beyond that. Any help would be greatly appreciated. Since they were in my family photos, I'm assuming they will fit into my family somehow.

Unfortunately, I was unable to find Barbara on the ancestry.com immigration records.
Elizabeth, Anna and Fred are the only children to show up on the 1880 census, in Beaver Creek, Greene County, Ohio.
Anna's date of August 1875, Frederick's of Oct. 1877, and Albert's date of Sept. 1880 are from the 1900 Dayton, Montgomery County census.

Side Note:
I'm not sure where all this is leading, but... here's a puzzler. According to a book Breweries of Dayton - A toast to brewers from the Gem City: 1810-1961 Adam Schantz, Sr. (brother of Frederick Schantz), was born in Mittel-Kinzig, Hessen Darmstadt, Germany on September 7, 1839. He was the son of Frederick & Marie Elizabeth (Scheller) Schantz. There were five brothers, all of whom left Germany on April 11, 1854 to escape militarism. Adam was the youngest. They landed in New York in May 1854. He [Adam Sr, the subject of the biography] worked for his uncle, Michael Schantz, who operated a flour mill in Altoona, Pennsylvania. He remained there for about a year, then came to Dayton to learn the trade of butcher from Michael Olt."
So from this we learn that a generation prior to the five brothers coming here had come, that the uncle of Frederick and Adam was living in Altoona [Blair County], PA. We also learn there were five brothers, when they left Germany, why they left Germany, when they arrived/as well as when they arrived in New York, and he went to learn the trade of butcher from Michael Olt.
Now to take this all a step further let's take a look at this previously unknown generation, Uncle Michael Schantz. Now hold onto your hats, cause living with Uncle Michael and Aunt Barbara in the 1860 census was a Catherine Horn age 18, and she was born in Darmstadt about 1842. We have Barbara Olt who married Frederick Schantz as the daughter of Frederick Olt and an unknown Horn. Obviously, this Catherine is much too young, and is listed as a servant; but could she be related? This might be the break we've all been waiting for! Updated October 12, 2014.
